These cute carrot patch cupcakes are fun to make for the Spring. Chocolate cupcakes with chocolate covered strawberries.

Chocolate Ganache
- ⅓ cup unsalted butter
- ⅔ cup cocoa powder
- ½ cup milk
- 1 cup powdered sugar
- ½ teaspoon vanilla extract
- ½ teaspoon almond extract
Cupcakes
- 12 chocolate cupcakes homemade or store bought
- 12 Oreo cookies icing removed
- 12 ounces orange candy melts
- 12 fresh strawberries stems on
Before starting the decorating process, prepare a batch of chocolate cupcakes. Use a homemade recipe or follow the recipe on back of chocolate box cake mix.
Make ganache. In a small saucepan, melt the butter and cocoa powder of medium heat. Stir to combine and remove from heat.
Transfer the chocolate mixture into a large mixing bowl. Pour in vanilla and almond extract. Add in powdered sugar and milk. Using an electric mixer, mix to combine and make the ganache.
Decorate the cupcakes. Use a cupcake corer, pairing knife, or spoon to take out the center of each cupcake. Frost the cupcakes with the prepared chocolate ganache. (Don't frost the hole you just made.) Dip the frosted cupcakes in a bowl filled with crushed chocolate cookie crumbs.
Melt orange candy melts in a microwave safe bowl in the microwave in 30 second intervals until melted. Dip strawberries into melted orange candy melts and then place the dipped strawberries on wax paper or parchment paper to harden.
Once the strawberries have hardened, place them in the hole of the cupcake. They are now ready to serve.
