    Carrot patch cupcakes are such a fun way to celebrate Spring. Chocolate cupcakes topped with a simple chocolate ganache and crushed Oreo cookies. These adorable cupcakes are then topped with a chocolate covered strawberry that resembles a carrot.

    If you are looking for a fun and festive dessert to celebrate Easter and spring, these cupcakes are a must make. They are:

    Cute - These cute carrot cupcakes might even fool the Easter bunny. So fun for an Easter celebration.

    Simple - Start with either store-bought cupcakes or easy cake mix cupcakes for the base.

    Versatile - Easily change the cupcake flavor to your favorite. You can also substitute the chocolate ganache with chocolate frosting.

    Carrot Patch Cupcake Ingredients

    • Cupcakes - Prepare a batch of chocolate or vanilla cupcakes.
    • Strawberries - Fresh strawberries with stems on are used for these spring cupcakes.
    • Orange candy melts - You can usually find the orange candy melts in the baking aisle of the grocery store or at most craft stores.
    • Oreo cookies - You can use Oreos or another chocolate sandwich cookie. The white cream filling will need to be scraped off.
    • Cocoa powder - Used to make the homemade chocolate ganache.
    • Powdered sugar - Powdered sugar, sometimes called confectioners' sugar, is used to sweeten the ganache.
    • Vanilla extract and Almond extract - Adds a depth of flavor to the ganache.
    • Butter - Unsalted butter is used for this recipe.
    • Milk - You can use whole or 2% milk for this recipe.

    How To Make Carrot Patch Cupcakes Recipe

    Before starting the decorating process, prepare a batch of chocolate cupcakes. You can use a homemade recipe or follow the recipe on back of chocolate box cake mix.

    Step one: Make ganache. In a small saucepan, melt the butter and cocoa powder of medium heat. Stir to combine and remove from heat.

    Step two: Transfer the chocolate mixture into a large mixing bowl. Pour in vanilla and almond extract. Add in powdered sugar and milk. Using an electric mixer, mix to combine and make the ganache.

    Step three: Decorate the cupcakes. Use a cupcake corer, pairing knife, or spoon to take out the center of each cupcake. Frost the cupcakes with the prepared chocolate ganache. (Don't frost the hole you just made.)

    Step four: Dip the frosted cupcakes in a bowl filled with crushed chocolate cookie crumbs.

    Step five: Melt orange candy melts in a microwave safe bowl in the microwave in 30 second intervals until melted. Dip strawberries into melted orange candy melts and then place the dipped strawberries on wax paper or parchment paper to harden.

    Step six: Once the strawberries have hardened, place them in the hole of the cupcake. They are now ready to serve.

    Dirt Patch Cupcake Recipe Tips

    • When dipping the strawberries, make sure not to cover the stem of the strawberries with melted candy.
    • Make sure strawberries are dry before dipping them in the melted candy. If they are still wet from cleaning, the chocolate won't stick well.
    • Want the strawberries to harden faster? Stick them in the refrigerator for 15 minutes.
    • If you don't have chocolate cookies like Oreos, you can substitute with chocolate graham cracker crumbs.
    • You can substitute chocolate ganache with chocolate frosting.

    If you can't find the candy melts, you can substitute by melting white chocolate and adding a few drops of orange food coloring gel.
