    Colorful cake mix treat

Funfetti whoopie pies are full of rainbow color and make an easy dessert for a party. They are a cross between a cookie, a cake, and a sandwich. Frosting is sandwiched between soft, cakey cookies filled with colorful sprinkles.

Ingredients needed cake mix whoopie pies

    • Funfetti Cake Mix - You will need a funfetti cake mix PLUS the ingredients on the back of the box. Ours included egg, vegetable oil, and water.
    • Vanilla Frosting - To make this super easy we are using a tub of vanilla frosting. You can also use homemade buttercream frosting.
    • Rainbow Sprinkles - Rainbow jimmies work well for these whoopie pies.

How to make easy funfetti whoopie pies

Step one: Preheat your oven to 350°F. Line cookie sheets with parchment paper or a silicone baking mat. Prepare the Funfetti cake mix according to the instructions on the box. Ours included eggs, water, and oil.

    Bowl of funfetti batter.

Step two: Once the batter is ready, scoop batter in a piping bag—pipe 1 ¾ - 2-inch discs of the Funfetti batter onto the prepared baking sheet. Be sure to leave about 1 inch between each disc. Bake for 10 to 12 minutes. Remove from the oven as soon as they start to turn brown around the edges. Do not overbake. Place on a wire rack to cool.

Step three: Once the Funfetti discs are completely cooled, fill a piping bag with white frosting. Reserve ½ of the cake discs and set them aside. Flip the other half of the Funfetti discs upside down—pipe white frosting onto the flat side of each disc. Grab the reserved Funfetti discs and place them on top of the frosting.

    Step four: Enjoy!

How to store leftover whoopie pies

Store: You can store these easy whoopie pies in an airtight container. They can stay at room temperature for 1-2 days or stored in the refrigerator for 4-5 days.

Freeze: To freeze, place them in a freezer safe bag in the freezer for up to 2 months.

    Recipe variations

Cake mix - Feel free to substitute with other cake mixes like chocolate, yellow, strawberry, even lemon.

Frosting - Depending on the cake mix you use, you can change the frosting to chocolate, lemon, pre-colored frosting and more.

Sprinkles - You can change the rainbow sprinkles to the color of your choice to fit in with your party theme.
