This easy dessert is perfect for the next patriotic holiday. A delicious cake made with a boxed cake mix and just a few ingredients. It's customizable, and a wonderful, cool and creamy dessert to serve, especially during the summer.
Ingredients needed for 4th of July poke cake
- Cake mix - White boxed cake mix.
- Eggs - You will use the number of eggs (or egg whites) the boxed cake mix requires according to the directions on the box.
- Oil - Vegetable oil is used for this recipe. Refer to the box cake mix for the amount of oil needed.
- Water - Used to mix in the JELLO.
- JELLO - A box of strawberry JELLO and berry blue JELLO
- Frozen Whipped Topping - Frozen whipped topping like Cool Whip.
- Sprinkles - Use patriotic sprinkles like red, white, and blue sprinkles or sprinkle color of your choice.
How to make red white and blue poke cake
Step one: Preheat your oven to 350°F and prepare a 9 x 13-inch baking dish with cooking spray. Prepare the cake using the instructions and ingredients on the cake mix box.
Step two: Allow the cake to cool for 15 minutes in the baking dish on a cooling rack. Use a chopstick or fork to poke holes evenly in rows across the top of the cake. Once you have poked the holes, place red jello mix and the blue jello mix into separate bowls. Then add ¾ cup of boiling water to each bowl and stir until the solution is well mixed. Then add ¼ cup cold water to each jello bowl and stir until thoroughly mixed.
Step three: Then using a squeeze bottle, measuring cup, or spoon, carefully pour the jello liquids into the holes alternating berry blue and strawberry jello by row, creating alternating rows of blue and red over the cake.
Step four: Once you have completed filling the holes with the jello mixture, allow the cake to cool for an additional 10 - 20 minutes in the refrigerator. Use a spatula to spread the whipped topping over the top. Return your cake to the refrigerator. Let the cake chill for at least 4 hours and then add sprinkles to the top of the cake.
Recipe tips
- You can use the end of a wooden spoon, chopsticks, or fork to poke holes in the cake.
- Be sure the cake is completely cool before you spread whipped topping over the top. If the jello or cake is warm, the whipped topping will melt.
- Try adding fresh fruit like sliced strawberries and blueberries to top the cake.
Substitutions for red white and blue JELLO cake
JELLO - Instead of using strawberry, try using raspberry. You can also replace the berry blue with Starburst blue raspberry JELLO.
Cake mix - You can substitute white cake mix with yellow. The white tends to show off the colorful JELLO better.
Topping - Replace frozen whipped topping with homemade whipped cream or even buttercream frosting.
How to store JELLO poke cake
Store: Keep this cake covered or in an airtight container in the refrigerator for up to 4 days.
Freeze: This cake does not freeze well.

- Then using a squeeze bottle, measuring cup, or spoon, carefully pour the jello liquids into the holes alternating berry blue and strawberry jello by row, creating alternating rows of blue and red over the cake. Use enough jello liquid to penetrate down into holes in the cake.
- Once you have completed filling the holes with jello, allow the cake to cool for an additional 10 - 20 minutes in the refrigerator.
- Once the cake has completely cooled, use a spatula to spread the whipped topping over the top. Return your cake to the refrigerator.
- Allow your cake to chill in the refrigerator for 4 hours. Once cooled, add your favorite patriotic sprinkles.
- Serve chilled, and ENJOY!
