Made with a cake mix and store bought frosting, these cupcakes can be made quickly and then transformed into mushrooms with the help of some store bought fondant.
Ingredients needed for mushroom cupcakes
- Cake mix - Yellow cake mix is used but you can substitute with a white cake mix or chocolate cake mix.
- Vegetable oil - Used to make the cupcakes.
- Eggs - Three eggs are used for the cupcakes.
- Water - Needed for the batter.
- Frosting - Store bought red and green frosting are used but you can substitute with homemade buttercream.
- Fondant - Black and white fondant is used for the eyes and mushroom spots.
How to make Super Mario cupcakes
Step one: Prepare a muffin pan with cupcake liners. Make your cupcakes using the instructions and ingredients on the yellow cake mix box. Ours called for 3 eggs, ½ cup of vegetable oil, and 1 cup of purified water.
***The only change to the instructions should be to fill the cupcake liners to about ¼ inch from the top of the liner. This technique will help the cupcakes rise into a “mushroom dome” shape. Allow the cupcakes to cool completely on a cooling rack.
Step two: Roll a piece of white fondant into a ¼-inch thick sheet. Use a 1 teaspoon or similar circular item to cut a 1-inch circle. Repeat until you make about 120 circles. Set them aside.
Step three: Roll a piece of black fondant into a ¼-inch thick sheet. Use a ¼ teaspoon to cut out 12 small black ovals. Cut each small circle in half and shape it into the eyes of the mushrooms.
Step four: When the cupcakes are cooled it's time to ice our mushrooms! Pipe half the cupcakes with red icing and the other half with green icing. Use an icing spatula to smooth the icing on the mushroom dome.
Step five: Put the white fondant discs on top of the iced mushrooms, spacing them evenly apart. Press gently to secure.
Step six: Use your extra icing as glue to place the “eyes” made of black fondant on the face of the cupcake liner. Now your mushroom cupcakes are complete!
How to store Super Mario Mushroom cupcakes
Store: These can be stored in an airtight container at room temperature for up to 3 days and in the refrigerator for up to 5 days.
Recipe variations
Cake - Use your favorite cake flavor for these cupcakes. Does your gaming party theme include pink? Try using strawberry cake mix. Funfetti cake mix would also be great for a celebration.
Frosting - You can choose your favorite color frosting to fit in with your party theme.
